Also known as Peony and Bai Mu Dan, Pai Mu Tan white tea comes from the Narcissus plant and is grown in Fujian province of China. After picking, the tea leaves are simply left to dry in the sun or in closed rooms without any technical intervention, making it one of the most unprocessed teas in the world. A larged leafed, its long green mottled leaves and silvery tips produce a shimmering amber liquor with a mellow, sweet, flowery taste. Pai Mu Tan tea should be brewed using water off the boil between 75°C and 80°C. Brew for 1-3 minutes. Serve without milk or sugar. Available in 125g loose.
